Ingredients:

  • 1 cup uncooked jasmine rice
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/2 cup frozen peas
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Instructions:

  1. Rinse the rice in a fine mesh strainer until the water runs clear. Add the rice and water to a medium pot and bring to a boil. Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.

  2. In a large skillet or wok, heat the vegetable oil over high heat. Add the chicken and cook for 5-7 minutes, or until browned and cooked through.

  3. In a small bowl, whisk together the soy sauce, oyster sauce, sugar, salt, and black pepper. Pour the sauce over the chicken and stir to coat.

  4. Add the chopped bell peppers, frozen peas, green onions, and minced garlic to the skillet. Stir-fry for 2-3 minutes, or until the vegetables are crisp-tender.
