Mutton handi qorma is a flavorful and creamy meat dish that is popular in South Asian cuisine. It is made with tender mutton pieces cooked in a spicy and aromatic curry made with a combination of yogurt, cream, and spices. 

Here's a simple recipe to make delicious mutton handi qorma at home:

Ingredients:

  • 1 kg mutton, cut into pieces
  • 2 tablespoons ghee or oil
  • 1 large onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 cup yogurt
  • 1/2 cup cream
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala powder
  • 1 teaspoon salt, or to taste
  • 2-3 green chilies, sliced
  • 1/4 cup fresh coriander leaves, chopped

Instructions:

  1. Heat ghee or oil in a large handi or heavy-bottomed pot over medium-high heat.

  2. Add the chopped onions and cook until they turn golden brown.

  3. Add ginger-garlic paste and cook for 1-2 minutes, or until the raw smell disappears.

  4. Add mutton pieces to the pot and fry them for 5-6 minutes, or until they turn slightly brown.

  5. Add cumin powder, coriander powder, turmeric powder, red chili powder, and salt to the pot and mix well.

  6. Add yogurt to the pot and mix well to coat the mutton pieces.

  7. Cover the pot with a lid and cook for 30-40 minutes, or until the mutton is tender and fully cooked.

  8. Add cream, garam masala powder, green chilies, and fresh coriander leaves to the pot and mix well.

  9. Cook the mutton handi qorma for another 10-15 minutes, or until the curry thickens and the oil separates.

  10. Serve hot with naan bread, roti, or steamed rice.
