Ingredients:

  • 8 oz. dried pasta (penne, noodles, fusilli or any other pasta of your choice)
  • 2 tbsp. olive oil
  • 1 lb. boneless, skinless chicken breast, cut into small pieces
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 carrots, diced
  • 1 zucchini, diced
  • 1 cup sliced mushrooms
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes.

  3. Add the onion and garlic to the skillet and cook until softened, about 3-4 minutes.

  4. Add the red bell pepper, carrots, zucchini, and mushrooms to the skillet and cook until tender, about 5-7 minutes.

  5. Add the chicken broth to the skillet and bring to a simmer. Let it cook for about 3-4 minutes.

  6. Add the heavy cream to the skillet and stir to combine.

  7. Add the cooked pasta to the skillet and toss to coat in the sauce.

  8. Add the grated Parmesan cheese to the skillet and toss again to combine.

  9. Season with salt and pepper to taste.

  10. Serve hot, garnished with chopped parsley.
